Bodegas Sel D'Aiz

Asier and Miriam, coming from agrarian investigation, have managed to combine the traditional ways with technological innovations that allow them to obtain different products, with high quality and environmentally conscious. This project became Bodegas Sel D’Aiz, a family project and challenge that they have overcame with effort, hope and knowledge, achieving a wine with character, particular and unique, reflecting earth values and author personality.

The winery philosophy is to rely on quality, based in the combination of artisanal production and the most advanced techniques of cold maceration and controlled fermentation in stainless steel vats, and in a human team that cares about every detail, guided by oenologist Rubén Jiménez, who supervises the final product.

The production area of “Vino de la Tierra Costa de Cantabria” is formed by the terrains apt for wine grape production from the coast to the lower valleys, up to 600 metres, with the exception of the municipalities in the geographical area of the “Vino de la Tierra de Liébana”. The 5ha of vineyards are oriented south-southeast, at an altitude of 500 metres with a 19% slope to encourage the most sun hours possible. The plants are located in the espalier, to avoid humidity and improve air movement and maturation. They are very well cared for, through traditional methodologies that incorporating new technologies to control the parametres in the vineyard. The plantation has 2.50 metres of row and 1-1.25 metres between vines, which equals a plantation density of 3,300-4,000 vines/hectarea. The vineyard was planted in 2009 with the varieties Albariño (40%), Riesling (40%) and Godello (20%).

Bodegas Sel D’Aiz owns an extraordinary plot of 7ha in Castillo Pedroso, at an altitude of 463 metres. The building has a winery, dating from late 19th century and which had a been used for farming. Castillo Pedroso has many secular buildings of importance, like the house-palace of Sancho Ruiz de Villegas and the house Pedroso, and also found there is the Roman military complex of Castro de Espina del Gallego, dating from the Cantabrian Wars. It now holds the wine production process, guided visits and private events, with a personalized service in which it is possible to organize the furniture and menu.

A family project, a passionate challenge for Asier and Miriam in which they put all their effort, hope and knowledge. Values that they wish to translate to a wine of character, particular and unique, which reflects earth value and author personality.
